Would you like a piece of Delicious Baked Fresh Blueberry Cheesecake?
My student gave me lots of fresh blueberries from his garden few days ago.
He said they are small so he recommend me to make jam but people often make jam with blueberries and it is kind of boring.
So I decided to bake blueberry cheesecake!
It was very easy to make so I made them yesterday and today.
I took some slices to my studnet's home and they really liked the cake!
Now I got more blueberry to make more blueberry sweets! Well I froze some to make nice fresh smoothies. I love lots of berries in my smoothie!
Hardest part of making this cheesecake is that you have to wait for hours until they are cool.
They smell so nice but you can not eat them!
It was torturing me! hahaha

Creamy, Cheesy and "Berry" Tangy top, buttery and crunchy bottom!
I used coconut biscuits for bottom part, so they added nice tropical accent to this cheesecake.
Since blueberries are tangy, they complemented each other perfectly!
They are so good!

生徒が生のブルーベリーをたくさんくれたのでブルーベリーチーズケーキを焼きました♬
今ブルーベリーの旬ですよね!木によって酸味が強かったり大粒だったりと不揃いですが生のブルーベリーはどれも美味しいですね。
先生これでジャムとか作るといいよぉと言われていたのですがブルーベリーというと結構皆ジャムを作るのでちょっと周りも食べ飽きてるしつまらないかなと思いチーズケーキを焼く事にしました!
下のクッキー生地にはビスケットではなくココナッツサブレを使ったのでココナッツの風味がトロピカルさをプラスしブルーベリーとチーズの酸味と最高にマッチしていました❤️
今度から私はチーズケーキを焼く時はココナッツサブレを使いたいと思います!

クリーミーで濃厚なチーズケーキにベリーのさっぱりとした甘酸っぱさが本当に良くあいます!
ご近所さんや生徒のうちにもスライスして持って行ったらすごく喜んでくれて嬉しかったです。
実は追加でまた貰ったので昨日も今日も焼いていますw
