This is always a hit in the house so I make a pretty big pot when I make it.
I am not great at measuring ingredients, I do a lot of eyeballing, LOL! This time around I made sure to get some measurements for this post!
1 big plate of pickerel cheeks (3-4cups)
1 large white onion, diced
8 stalks of celery, sliced
bag of radishes, quartered (pre-boil for a minute to take the color out so you don't have pink soup)
half a carrot for color, sliced
1/4cup butter
2 tsp guar gum (thickener)
1 tsp salt
1 tsp pepper
6-8 strips of bacon, cooked and chopped
4 cups heavy whip cream
3 cups water
Sautee the onions, celery, and carrot in the butter until soft.
Stir in the guar gum, then slowly whisk in the cream and water
Add bacon and simmer for 15mins.
Add the pickerel cheeks and simmer for another 6-8 mins until the cheeks are cooked
Add the radishes and a bit of parsley for garnish. Enjoy!!
