Bibingka is a Filipino delicacy, it's a rice cake cooked in a traditional oven that is similar to a brick oven or an improvised oven made of metal sheets. They put burnt charcoal on top and at the bottom of the oven to cook the bibingka. When it's done the bibingka has that burnt marks on top, because of this cooking style. Bibingka is wrapped by a banana leaf and it gives it an added aroma that adds flavor to it.
Bibingka is made of ground rice and coconut milk and some sugar as sweetener. Its texture is thicker than usual rice cakes that use fine rice flour. It's also creamy and sweet because of the coconut and the sugar.
