Chopsuey is another Chinese influence on Filipino cooking. It's a dish of stir-fried bite-sized mixed vegetables with tiny slices of meat or seafoods. Filipinos make it as colorful as possible by mixing different colored veggies. Filipinos have a lot of variations of this dish. This can be customized to just have whatever veggies you like. Like in the picture, our cook preferred to use all green ingredients that's why it looks that way.
Chopsuey is a healthy dish, it could have all your diet needs. Some add boiled quail eggs in the mix to have that added protein. You can enjoy it with rice or just have it as it is. Depending on how one cooks it, it could taste like a salad when you quickly turn off the heat. Basically, cooking is just sauteing the spices, garlic and onion and stir frying the vegetables after then add the liquid seasoning with the salt and pepper to your desired taste. Taking it off early from the heat means the veggies would be crunchy and semi-cooked, which some people prefer.
