Kamote or sweet potato is a common root crop in the Philippines. Aside from the roots, we also eat the leaves and stem of kamote, the kamote tops. We just have it cooked with water and some spices like onion and lemongrass, we bring it to a simmer and voila, we have "nilagang dahon ng kamote." We eat it like a salad. We drain the water out and then squeeze Philippine lemons (kalamansi) over it then we serve it. We can also add sliced hardboiled eggs on the side for proteins or any other sides we think it could go with. This leafy goodness is a good source of fiber and iron.
