Sinamak is a condiment and its base is vinegar, it's a spiced vinegar. We use this as a sauce to dip our grilled and fried foods. We prefer using coconut vinegar because we have coconuts everywhere in the country. We add spicy ingredients to the vinegar, like chilis, garlic, ginger, black pepper, and white onions. We leave them in a tightly sealed bottle for a week then we use it to add flavor to our grilled and fried foods.
The first picture is a homemade sinamak I made for the family, repurposing an iced tea bottle. The second picture is a commercial sinamak we bought from the grocery.
