Indonesia has thousands of cuisines. One of them is Lemper. It is like Sushi from Japan. It is made of gloutinous rice filled with chicken , tempe, or dried coconut . Lemper is served as snack. It is not a main dish. Indonesian like to eat lemper as the heavy and fulfilling snack. Instead of eating bread, you wil fill up more eating lemper. Do you want to try to make lemper, here is the recipe.
Glutinous rice
300 gram white glutinous rice (Indonesian: beras ketan putih), soak for 2 to 3 hours
200 ml coconut milk (Indonesian: santan)
4 kaffir lime leaves (Indonesian: daun jeruk)
4 bay leaves (Indonesian: daun salam)
2 pandan leaves (Indonesian: daun pandan), knotted
½ teaspoon salt
Spiced chicken floss
250 gram boneless skinless chicken breast (Indonesian: daging dada ayam)
2 tablespoon oil
4 shallots (Indonesian: bawang merah)
3 cloves garlic (Indonsian: bawang putih)
3 candlenuts (Indonesian: kemiri)
½ teaspoon coriander seeds (Indonesian: biji ketumbar)
½ teaspoon cumin seeds (Indonesian: biji jinten)
2 kaffir lime leaves (Indonesian: daun jeruk)
2 bay leaves (Indonesian: daun salam)
1 teaspoon tamarind + 3 tablespoon water, seeds and pulp removed
100 ml coconut milk
½ teaspoon salt
2½ tablespoon sugar
Steamed glutinous rice for ± 20 minutes or until cooked through, then remove from heat.
Boil coconut milk, lemongrass, bay leaves and salt until boiling. After that, turn off the heat and add the glutinous rice and cook until absorbed. After that, lift and steamed around ± 30 minutes or until cooked
Flatten slightly sticky and give the contents. Then the form of donuts to your liking and then wrap with banana leaves.
Filling ; Put the chicken into the pan and boil until cooked and then lift the chicken.
Saute chicken, spices, lemongrass, pepper, bay leaf, sugar. and salt and stir until evenly mixed.
