One of our customers brought in freshly caught tuna from the canyon area about 5 miles off the coast of New Jersey.
The Tuna was the best color I have ever seen and we couldn't resist picking at the fish sushi style as we prepped it for the dish we were serving as a special.
The special included perfectly cooked tuna with a pineapple corn relish and creamy split pea and carrots risotto.
This was a tuna cooked rare and just has the best cooked lines I had ever seen in a tuna. As you ate it the layered fish effortlessly pulled apart. It was an amazing and filling meal.
