Baked Cod And Steamed Vegetables With A Fresh Corn Tortilla
We often think of breakfast and dinner and ignore the mid-day meal. The mid-day meal or lunch is the perfect time for a platter of steamed vegetables made up of asparagus, broccoli, brussel sprouts, mushrooms, and small pieces of Mandarin oranges. All this with a piece of left over baked Cod and a corn tortilla. What a delicious meal to break the day!
So when thinking of what to eat, look beyond sandwiches and other standard lunch items to include the produce of the garden and last nights left overs. You never know what you might discover.
