I wanted to share some of my experience to preparing Egg noodles in South Indian style, Its not completely Indian style its regular style where we added south Indian spices to enhance the taste.
Step 1:
As everyone starts, boil the noodles pack where you can buy in any local store and its cooked by boiling and filtered with ice cold water to keep the noodles tendency and keeps the shape of the noodle, otherwise it will break easily.
Step 2:
Have the sliced cabbage and carrots and onions in thinner.

Step 3:
Prepare the fied eggs separately to keep the egg smell out of the noodles, if you add the egg into noodles without fry then it mixes with noodles and smells until you eat. its bad taste. So Prepare frying the eggs another pan.
Step 4:
Take a Kadai(big pan), start with oil and add the garlic cloves sliced and add the cabbage and fry it , after some time add the onion and carrots.
Add the salt and chilli powders as needed, keep mixing and frying and after 5 minutes and add soy sauce

Once its fried and look golden brown color, then add the fried eggs with the pan
Step 5:
Add the cooked noodles into the pan and mix it with higher temp to fry little more,
The final output of the noodles will be like this, its delicious taste and good with drinks.
