Cast Iron Garlic and Brown Sugar Chops with Roasted Fingerlings
Ingredients for chops
3 large pork chops, bone in
2 Tbsp olive oil
4 Tbsp of butter
Rub mixture
1/4 cup brown sugar
1 tsp garlic powder
1/2 tsp cajun seasoning
1/2 tsp kosher salt
1/2 tsp pepper
1/2 tsp onion powder
1/2 tsp paprika
Ingredients for fingerlings
1 lb. of fingerling potatoes ( You can use other potatoes if its what you have, I enjoy the fingerlings with these chops because of theyre creamier and a little sweet compared to other varieties.)
2 Tbsp of olive oil
2 tsp garlic, minced
1 tsp paprika
1 tsp garlic powder
1/2 tsp kosher salt
1/2 tsp pepper
1/2 tsp season salt
1/4 cup fresh parmesan (optional)
Instructions for Fingerlings
Preheat your oven to 400 degrees.
Wash the fingerlings to get rid of any dirt on potatoes. Slice all potatoes length wise and then cut those length wise give you 4 "fries" per potato.
In a large bowl, add potatoes, oil and seasonings. Mix well making sure to get all potatoes covered with oil and seasonings.
Line a baking sheet with foil, and spray with non stick spray. Lay potatoes out in a single layer on baking sheet so they can cook evenly.
Pop in oven and let cook for 30 minutes or until fork tender, giving them a stir half way through.
When potatoes are done remove from oven and sprinkle with parmesan if you would like. And thats it for the potatoes!
Instructions for Chops
Mix all rub ingredients in a small bowl. Set to the side.
Take pork chops and dry with a paper towel. Sprinkle evenly with rub, on both sides.
Turn on burner to a med-high heat, warming the cast iron pan for a minute. Add in butter and allow to melt completely. Gently lay chops in pan.
Cook for 4 minutes, flip chops and baste with butter in pan. Cook for another 4 minutes. Flip and baste again, cooking for another 2 minutes. Flip and baste again. Do this until chops are done cooking, meat reading 145 degrees on a meat thermometer, juices running clear and a light pink in the middle. Set on a plate and allow to rest for a couple minutes before plating. And thats it for the chops!
