hey mate. Next time, tell the butcher that you're doing a bone broth. Don't use soup bones and try using big fat marrow bones. It should work even better.
When I do it, I make a stew at the same time, the bigs that get cut off such as peelings and stalks ect go in the broth, the rest in the stew.
