We use different parts of vegetable plant like seeds, roots ,fruits, leaves, vine, stem, shoots and flowers in our kitchen. There are few vegetables that we can eat almost every parts of their plant and one of the famous is "Pumpkin" .
We can eat Fruit(Pumkin), young leaves, shoots, soft part of stem and flowers of pumpkin. It is the best source of Vitamin A, Vitamin C, Calcium and Iron .

Pumpkin Shoots !
Best part is the shoots of pumpkin plant to eat as vegetables . This is the one of the major seasonable green vegetable in Nepal. Fried and wilted shoots are best. My favorite is fried shoots of Pumpkin. This is helpful to control Blood pressure, constipation, reduce risk of cancer and boost our immune system.
