After buying a huge bag of potatoes and being done eating all sorts of potato side dishes I decided to make them the main dish. So fried potato tacos it was! Not only are they super easy to make and delicious, but by adding vegetable toppings you feel a tad bit healthy haha.
For a snack it was Sunomono, Japanese cucumber salad. Super good and refreshing!
Now off to make brunch!
