Today's feast was SUPER easy, low carb, gluten-free pizza boats. It took me all of 10 minutes to throw together. So here we go!

INGREDIENTS:
3 - 4 colored bell peppers
16 oz. bag of shredded mozzarella cheese
8 oz. pizza sauce
Mini pepperonis
Dried, grated parmesan
Any other toppings you desire
INSTRUCTIONS:
*Preheat Oven to 350
STEP 1: Slice the peppers lengthwise and gut out the seeds and white pulp
STEP 2: Add a couple tablespoons of pizza sauce to each shell and jiggle until evenly distributed
STEP 3: Liberally add cheese to each pepper shell
STEP 4: Layer pepperoni on top and sprinkle with grated parmesan.
STEP 5: Drizzle a baking sheet with olive oil, place pepper boats on baking sheet, and bake for 12 - 15 minutes, or until cheese is fully melted and peppers are still slightly crispy.
STEP 6: Enjoy!
