Hello everyone. Happy Friday!
The harvest on the farm is finished, with our freezers full, the jars of pickles, sauce and fruit, stacked nicely and our cold storage full of winter squash, we give thanks. This was an excellent growing season this year. The only disappointment was once again the walnuts. We have yet to figure out how to keep the squirrels and the jays from robbing us blind.
On the menu today is cream of tomato soup, topped with freshly made croutons, a sprinkle of parmesan cheese and sweet basil.
To begin, take a stroll to the garden and collect some nice ripe sweet tomatoes, grab a bunch of basil and head back to the kitchen.
The tomatoes need to be par-boiled, plunged into ice water, peeled and seeded. This takes some time, but with the music on and a beautiful view from the kitchen window, time flies.
After a whirl in the blender, I add little salt and pepper, a dash of sugar and some cream.
I always make some extra to pull out of the freezer for lunch on a cool day.
