Hello friends, food lovers, and community! Today, I am sharing a healthy and easy-to-make recipe made from finger millet. The pancakes that everyone can enjoy for breakfast, lunch, or dinner.
These grains look like mustard seeds, dark brown and smooth.
Ingredients: to make 6-8 pancakes.
1 cup of finger millet
1 tsp salt
coconut oil to brush the pan
I washed them thoroughly they have many layers of bran and need to be washed two-three times
When the washing water came clean I soaked them in fresh water for about 4-5 hours.
then I drained away the water and put the millet in a mixer jar.
adding 1/2 cup new water ground to a fine paste
I transferredd this to a pan.
Covered the pan and kept aside for about 8 hours.
by then it was nicely naturally fermented. without any added culture or yeast.
I added salt And stirred the batter thoroughly.
The batter was nice and bubbly.
Greased skillet using coconut oil.
spread a ladle full of batte on the pan.
When the batter in the pan started changing color i flipped it.
and cooked the other side.
Made all the pancakes .
they are very good with shredded or dessicated coconut and jaggery but I wanted a savory version so I made coconut chutney from fresh coconut, peanuts, chili, salt lemon, and fresh coriander
you can enjoy them with coconut chutney and a few vegetables and it's a wrap.
