The Africans who were taken as slaves brought Okra to the United States. It has since become a star ingredient in Cajun cooking. The term "cajun" refers to descendents French immigrants who integrated into the south. Cajun is a style of cooking popular in Louisiana and New Orleans. The Cajuns started with French cooking techniques and added a great deal of spice and things from around the world.
You will find okra in gumbo, jambalaya and other foods.
As okra is from the tropical climate of North Africa, it does not grow in Northern states.
