My friend offered me the zucchini with sauce he made recently for me to taste. When I liked it, I got the recipe from him and said I'll make it when I get zucchini. While visiting the market yesterday, fresh zucchinis caught my eye and immediately bought it. As soon as I got home, I checked the note I received and cooked it. I'm not much of a zucchini lover. I can never eat especially boiled zucchini. I really liked this taste with sauce. I thought that maybe if there are zucchini lovers among you, they would like to try this recipe and I wanted to share it with you.
Ingredients in the Recipe
1kg Zucchini
1 Onion
2 Cloves of Garlic
2 Tablespoons of Lemon Juice
1 Tablespoon of Flour
1 Tablespoon of Tomato Paste
Half Tea Glass of Oil (40gr)
2 Tablespoon of Apple Cider Vinegar
400ml Water
Hot Red Chilli Powder
Mint
Salt
After washing the zucchini, I peeled them. I cut them into rings, not too thick. (I reduced the above ingredients a little and cooked for one person)
I cut the onions into half moons. Then I cut the garlic into small pieces with a knife without crushing it.
I started to prepare the sauce in a separate bowl. I poured 2 tablespoons of vinegar and 2 tablespoons of lemon juice into the mixing bowl. If you do not have apple cider vinegar, you can also use grape vinegar. I like apple cider vinegar more than grapes. Grape vinegar has a very pungent odor.
I added flour and oil.
I added tomato paste and spices. We made tomato paste ourselves last summer, it's completely handmade :)
Finally, I added water and whisked the sauce well.
I added the zucchini onions and garlic to the fireproof baking dish and stirred them. I poured all the sauce we prepared on top of the zucchini.
I covered it with parchment paper before putting it in the oven. It will cook much better this way. I added the tray to the oven heated to 180 degrees and baked for 50 minutes. I took it off the parchment paper and let it cook for another 10-15 minutes.
Delicious Result
I served it with homemade yogurt on the side. It was a very tasty and light recipe. I couldn't stand the sauce and slid some bread. If you haven't experienced it before, I highly recommend doing it.
