How is your Thursday going hivers and friends of vegan family. Today’s morning was a hectic one due to an early morning appointment I had to meet up with work on the field for inspection. In fact it has been a stressful week because of search for an apartment for a client. So I skipped breakfast hoping to dash home for a delicious spicy 🌶 lunch 🥙 I planned.
Today friend am here to share with you my recipe for twisted pasta 🍝 garnished with cabbage 🥬 and carrots 🥕in a spicy cherry tomatoes 🍅 sauce. I so much crave for the combination for the spices and added veggies that gives it healthy boost.
Its such a heavy lunch 🥙 but one I really need after how the week has been. Work is good guys but we must always look after ourselves to stay up and doing.
Here I show you the process steps by steps for this recipe.
INGREDIENTS:
300 g of twisted pasta
4 large cherry tomatoes
1 medium size carrot 🥕
1/4 medium size cabbage 🥬
1 medium size red onions
1 1/2 tablespoons of margarine
1/2 teaspoon of curry powder
1/4 turmeric powder
1/2 teaspoon of salt
Some hot chili papers 🌶
STEPS FOR PREPARATION:
Step 1.
To prepare this recipe I will begin with washing and slicing the cherry tomatoes , onions and hot chili
.And keep it aside.
Step 2.
Then clean, wash and slice the cabbage 🥬 and carrot 🥕
As here above. Keep aside.
Step 3.
Next is to add the sliced tomatoes 🍅, onions and chili into the blander for blending. Adding just little water.
And will gradually blend it, leaving it textured.
Step 4.
And will set to fry the sauce by dissolving the margarine 🧈 and adding the blended cherry tomatoes 🍅

Step 5.
Will fry the sauce gradually to dry a bit then add the curry powder, the salt and turmeric powder.
Stir properly and allow to fry for few more minutes to show oily surface
Step 6.
To boil the twist pasta, I will first measure out the pasta needed.
And set the water to boil, adding the pasta once the water boils briskly .
Step 7.
I will add a pinch of salt , cover to cook for 10 minutes and drain it off.
As here above .
Step 8.
To add the cabbage and carrots to the pasta 🍝, I will add the veggies in a pan here , adding the steamy pasta on it and set it on the cooker to steam underneath while adding the fried tomatoes sauce.
Then stir them together while it’s steaming to tender the veggies and incorporate properly. As here above.
Serve this meal hot the way I enjoy it. This lunch taste so good, spicy and delicious. The cabbage 🥬 and carrot veggies made it one to really crave for because it gave it that vegan touch and love ❤️ for healthy lunch of spicy pasta 🍝.
