Foods that are processed through the fermentation process are very delicious to be processed into various types of dishes. In Indonesia, when people hear the name oncom, people immediately understand that this food ingredient comes from West Java or Sundanese.
I remember having a friend who really likes one of the processed oncom dishes. Her name is Luna, she was born in Cirebon, and Nasi Tutug Oncom is one of Cirebon's specialties. In fact, the original of Nasi Tutug Oncom is an area called Tasikmalaya.
Nasi Tutug Oncom is a dish of rice mixed with stir-fried oncom. This dish is best enjoyed when it is still warm.
Another processed meaning that relies on oncom is COMRO. Comro is an acronym for Oncom Dijero. This means that the food contains oncom. Comro has two important components for its manufacture, namely; Oncom and Cassava. This food made from grated cassava and filled with spicy stir-fried oncom has a lot of fans, including me. Usually sold in a cart on the side of the road. The price is also very affordable. around IDR 1k-2k/pcs.
And today, I want to share a simple recipe for oncom processing that is no less delicious.
Before I share the recipe, I want to tell you a little about the cooking process this time.
The recipe I share is stir-fried oncom. Tapai is usually the most important ingredient to complete this oncom stir fry; Leunca.
If you search the search page about leunca, you will find lots of pictures of green, small round vegetables. Leunca is included in the eggplant category. If you pay attention when eating leunca, the contents of leunca are very similar to eggplant.
But the bad news is, I've been looking for leunca in the market for a week and still can't find it. The sellers who usually provide leunca say that Leunca is very rare. Finally, I decided to keep cooking Oncom without Leunca.
So, let's get straight to it!
Ingredients
- oncom
- bean sprouts
- leek
- onion
- garlic
- Cayenne pepper
- Red chili
- salt
- sugar
- vegetable oil
tools
- pan
- spatula
step by step
- knead oncom until smooth
- Puree onion, cayenne pepper, red chili, garlic
- cut the leek one centimeter long
- Heat a little oil, then add the ground spices. cook until it smells good,
- Enter oncom, add sugar, salt. stir until smooth
- insert bean sprouts
- lastly, add the scallions and chilies.
Stir continuously until the bean sprouts are slightly wilted and everything is well mixed
Taste the taste. if it's just right, turn off the stove, remove the pan, and serve!
Oncom is ready to be enjoyed.
