📌 Ingredients:
âś…- 2 red bell peppers;
âś…- 2 medium aubergines;
âś…- 100 g of red capsicum (the number of peppers varies in taste);
âś…- 2 cloves of garlic;
âś…- 2 tbsp. Red wine vinegar;
âś…- olive oil;
âś…- parsley if desired.
📌 Cooking process:
Peppers and aubergines should be washed and placed in an oven heated to 220 degrees. Bake for 40 minutes, then remove from the oven and allow to cool.
Peppers cut in half, peeled of seeds and peeled. Eggplants must also be peeled. Then cut the vegetables into slices.
Grind garlic and hot pepper; Fry them on an oiled frying pan for 4-5 minutes. Add pepper and eggplant, pour in the vinegar. After 5 minutes the sauce is ready. Add the parsley.
