One pound of penne pasta
tofurkey sausage (I used the spinach pesto), chopped
Four cloves of garlic, minced
Four cups water
One tbsp bouillon "better then chicken"
Two and half cups of unsweetened (plain) cashew milk
One and half tablespoons of Cajun seasoning plus more for topping
1/4 cup nutritional yeast + more for topping
1/4 cup of Italian flat leaf parsley minced
Half tsp salt
1/4 tsp pepper
Directions
To a large pot over medium heat add chopped vegan sausage and cook until lightly browned.
Stir in garlic + Two tbsp water and cook for for about two minutes.
Add in water, bouillon "better then chicken", cashew milk, uncooked pasta and cajun seasoning to the pot.
Stir together and bring to a simmer over medium high heat.
Reduce heat to low and let cook covered for Fifteen to twenty minutes, or until pasta is tender.
