I love anything that comes out of the crockpot because it makes evenings more manageable and tacos are one of my husband’s favorite dinners he loves coming home from work to a big plate of homemade tacos. They are easy, healthy and can be customized to your taste. You can use this chicken over lettuce for a taco salad, on a fried tortilla with eggs as a breakfast tostada, or just in warm tortillas with cheese and cilantro as tacos.
- 1lb chicken boneless skinless breast
- 1 cup salsa
- 1 packet of taco seasoning or make your own for lower sodium (chili powder, cumin, garlic powder, onion powder, paprika, crushed red pepper, salt and pepper)
- 1 tbs lime juice
- Handful of fresh chopped cilantro
Put it all in the crockpot and cook on high for 6 hours. after 5 1/2 hours shred chicken in crockpot and let finish cooking in the sauce. Serve hot and enjoy!
