Looking for a simple, satisfying dinner full of flavor? You may have heard of Cacio e Pepe, which translates to cheese and pepper, the easy, no fuss dinner that is perfect for the nights you don’t have time or energy to make an extravagant dinner. Well this is cacio e pepe plus, as my simple additions of frozen peas and broccoli take no more extra time or effort, but add a big boost of flavor and nutrition.
Serve this by itself for a filling meal, or feel free to top with a protein source like grilled fish or tofu. And of course every meal can only be improved by the addition of a salad.
Ingredients:
- 10 ounces of pasta, mini penne or shells work great for this recipe
- ⅔ cup frozen green peas
- ⅔ cup frozen broccoli, chopped
- 1 cup shredded parmesan cheese
- 1 tablespoon fresh ground black pepper
- 4 tablespoons unsalted butter
- 1 teaspoon kosher salt
- Prepare pasta to package directions, with final 5 minutes of pasta cooking time, add peas and broccoli. Drain and set aside.
- In a large skillet melt the butter on medium heat. Add the pasta and stir well until pasta is coated with butter. Reduce heat to low
- Add the parmesan, salt and pepper. Stir well until cheese is melted and distributed evenly over the butter.
- Remove from heat and serve.
