This salad is all things good. It features ample greens, protein packed quinoa, and avocados, which we all know to be blessed with all the good fats, and a rich creamy taste, unlike any other. I also have added almonds and feta, as both are known to make any dish twice as delicious. We actually have a saying around our kitchen: everything’s betta with feta!
As for the dressing, the sweetness of honey mixed with the zesty tang of lime is an absolutely perfect topper for this hearty salad.
Ingredients:
For the Salad
- 4 cups mixed greens (I used spinach, kale, radicchio, and romaine)
- 1 avocado, seeded and sliced lengthwise
- ¼ cup shaved almonds
- ⅛ cup crumbled feta cheese
- ⅛ cup prepared quinoa
For the Dressing
- juice of 1 lime
- ⅛ cup olive oil
- 1 tablespoon honey
- ½ teaspoon salt
- ¼ teaspoon fresh ground pepper
- Prepare the salad by placing the greens, almonds, quinoa, and feta in large bowl. Toss the ingredients together and top with the avocado.
- Prepare the dressing by combining the lime juice, olive oil, honey, salt, and pepper together and stirring to fully incorporate.
