I rarely post food pictures but there are three recipes that I am quite fond of. Actually they are quite similar and they all share a common ingredient that I totally love. Avocado!
Here at Crete we have many varieties of avocado trees so we can harvest 9 months out of the 12 of the year. But still the 3 months that there aren't any of them around, I tend to become miserable. But then again if you don't miss it how are you going to appreciate it :)
Anyway lets go to the recipes.
The first one is a super simple, super tasty and super healthy snack. I know usually healthy and delicious are not a good match but this one is a unique delicacy!
The basic ingredients are orange, avocado, garlic and some dill.
You peel the orange and cut it into pieces.
You remove the seed from the avocado and take the flesh with a spoon.
You peel the garlic or if you don’t like the smell of it you can use ginger.
Myself I love garlic especially the variety we have here on Crete. :)
Does it sound like a weird combination?
Let me assure you that it is not weird at all and it gives you a real energy boost!
If you want to give it some extra sweetness you can add a few dates. I did!
You through them all into your blender, a few spins, some grated linseed on the top and voilà!
The second one is a quite unusual, nevertheless very easy to prepare pasta. If you are not familiar with green stuff on your plate take my advise, try it before you reject it!
Of course you can use any kind of pasta although I think that black bean tagliatelle are perfect with the lentil sprouts (or any other kind of sprouts) and some chopped parsley!
And the sauce, ridiculously easy :)
While the pasta is boiling put in the blender one avocado, one clove of garlic, half lemon, some sea salt and a touch of cayenne pepper and spin them a few times. Add a little water from the pot that you boil the pasta for more smooth result! Add a little water from the pot that the pasta is boiling for more smooth result!
You can serve it on a large plate with some grated linseed on the top and enjoy!
Last but not least a salad that is a complete meal!
It is a spinach salad with avocado, parsley, green onion, carrot and green bean’s sprouts.
As for the dressing is extra virgin olive oil, lemon juice, turmeric, sea salt and cayenne pepper shaken all together.
And if you can find organic vegetables or even better grow your own, this is the ultimate dish :)
