Pilipit is one of Filipino snack food, deep-fried glutinous rice coated with caramel. It is perfect for snack or dessert. This fried rice are sweet, chewy and gluten free, but beware on false teeth its sticky.
With only 4 ingredients you can make a delicious snack, pilipit are quick and easy to prepare and ready for 30 minutes.
INGREDIENTS
4 cup glutinous rice flour
2 cup water (added some if needed)
oil
FOR THE SUGAR COATING
1 cup sugar
1/4 cup water
HOW TO MAKE PILIPIT
- You can put coconut milk or coconut juice if you want to add some flavor.
- The dough should not feel dry or sticky, you can add more water if needed until dough smooth and pliable.
- Attention to this, too hot and the rice will brown on the outside before completely cooked through on the side, too low and the rice will absorb more grease.
- Use enough oil for frying, and notice that pilipit will float to surface when done.
HOW TO MAKE CARAMEL SYRUP
Simply adding the water to sugar and boiling off the mixture until thick and golden brown. Stir until the sugar dissolved but once the sugar is starting to boiled don't stir to avoid grainy caramel. Take the caramel off the heat when it’s a shade slightly lighter than the color you like as it will continue to cook from the residual heat.
