If you've ever been here in Cebu, you'd know what a "lechon" is. For those that don't, it's roasted pig. The Cebu lechon specifically is, the best in world according to to Anthony Bourdain. And a lot of people agree.
Well here's our mini version of it - Homemade style.
This is just the belly part. It's spiced up, tied and roasted to perfection. It cooks for about 4 hours in the oven. Lemon grass or "tanglad", gives it it's unique aroma and flavor.
The meat is tender, flavourful and mouth watering. I don't know anyone who isn't crazy about the crispy "panit" or skin. It's everyone's favorite part.
You can find the lechon belly sold almost everywhere around the city. They are always in high demand during the holidays. If you decide to visit cebu, do try our lechon belly. It comes in spicy and regular flavors. Try it, you won't regret it. :)
