So it was that I arrived on Monday from work to see her hard at work preparing this splendid dish! She wrote an incredibly detailed step-by-step article about it, and this post is our official entry to the contest, in english.
Because this was our first time, when we went to post the entry, we released that we had made a mistake, which I will talk about near the end.
Without further ado: Eggplant Pizza a la Criolla!
So first of all, what is 'a la criolla'?
Here in Colombia, the term criolla means local or 'like we do it'. My wife has an incredible sazón, which is a special flavor that gets added to every dish. Whether sazón is a real ingredient or some energetic forces - that is open for debate. But today I will show you her special sauce when it came to this pizza.
Onions and garlic! They can go in anything and everything, although think twice before applying this advice to desserts. The add both a special flavor and a better texture to most meats, as well as permeating an entire dish when it is cooked in the oven.
Here is the whole ingredient list!
1 Eggplant
½ pound ground meat
2 cloves of garlic
1 round onion
½ pound soft cheese, sliced
½ pound grated cheese
6 tomatoes
1 cup wheat flour
1 spoon of vegetable oil
1 spoon of orégano
Salt and pepper to taste
Here is our mistake! We made the dish on Monday, but last night finishing off her article and reviewing the rules, we realized we had not taken a picture with the username and date! We took one today with the left over eggplant, and have learned our lesson for future submissions.
This was the first time that my wife has cooked with eggplant/berenjena, and one of the first times I knowingly ate it. It tasted great; we had a blast and are looking forward to future weeks!
