This week... Well, it was hard to find a dish and I must admit, I searched for my recipe on the Internet. And not in Latvian forums. In fact, I could no find one monochrome dish coming from Latvia. So I took to the usual English web-pages, found something that I liked and made it my own! This dish will have a lot of pale yellows and a couple of pops of bright color. And, even though I did not make my chicken golden brown, the rest of the dish was still abiding the rules.
This was a unique dish for me because I used wine. It was a first as I do not drink and usually do not buy a bottle of the liquid just for one dish either. But, from the last gaming night that we hosted, a guest left a bottle of a local white in our fridge and today it came out of it. Even if just for a little bit.
This is an easy dish with a couple of ingredients. Nothing fancy (maybe a little bit) and easy to make. The baking and cooking process took me around 35 minutes. Preparation was 15 minutes and the waiting period for the liquid to soak into the chicken was around 45 minutes. All together it took me little over an hour (I multi-tasked) and I think, you can make this dish just as easily!
The following recipe is for 2 to 3 people
Ingredients
250 g chicken
1 passion fruit
2 bell peppers
4 big potatoes
1,5 lemons (yes, mine are a little dry :D)
80 ml white wine
1 onion
white beans
olive oil
coconut oil
1 tablespoon honey
salt and pepper
paprika spice
1 egg
1 tablespoon vinegar
Take two bowls, one smaller (for chicken) and one bigger (for the greens, in this case, they are yellow :D)
In the smaller bowl scrape in your passion fruit, add olive oil, lemon juice from 1/2 of a lemon, white wine, salt, and pepper
Put in the chicken and cover it with liquid, then put the bowl on the side for 45 minutes
In the second bowl mix the honey, vinegar, lemon juice from 1 lemon, crushed garlic cloves, olive oil and coconut oil
Preheat the oven to 200 degrees Celsius
Cut your potatoes into slices and add them to the bowl
Cut up the bell pepper and add it in as well, then on top, add the beans
Season with paprika spice, salt, and pepper then mix everything and put it in a baking pan
Put in the oven for around 35 minutes
Now, heat up a pan and get back to your chicken
You can choose to make the chicken brown first or sauté it with all of the liquid. That way the wine will soak into the meat even more
I heat up my pan with some olive oil and then add the chicken. Reduce heat to minimum and put on a lid.
In around 10 minutes turn around the chicken and leave for a couple of more minutes.
Finally, boil two eggs separately, season with salt
Fun Fact. Do you know that eggshells are good for plants? They have a lot of calcium in them. My grandpa used to grind them and give them back to the chickens when I was little. They, in turn, provided the birds with necessary vitamins. It works the same with home-grown plants.
This was a very delish meal and I do hope I will not be eliminated out of the contest because my chicken is pinkish and my eggs have whites in them :D
