I decided to make a spinach pie, Greek style. I always have Phyllo Dough in my freezer, just in case I need to improvise a quick dish. Life saver.
Simple ingredients: Feta cheese, spinach, eggs, olive oil, onion, garlic.
The spinach mixture is obvious: chopped onion, a little garlic, sautéed. Add 2 beaten eggs and feta cheese when cooled. Some people add chopped parsley, I don’t. I prefer a stronger taste of spinach.
Layer the phyllo dough sheets as instructed on the package. You must work fast, because they dry fast. The secret is to brush them with olive oil. I hope you have a good brush in your kitchen.
Layer 4 sheets, spread the spinach/feta cheese, layer 4 more and fold the corners.
Preheat oven at 375F and cook up to 45 minutes. Cut in squares.
Don’t eat too much. This is a savory and very satisfying dish. You will feel very sleepy with the belly full, like my kitty. She finds some weird positions to sleep. She is an acrobat and contortionist for sure!
