Mushrooms, one of my favourite vegetarian ingredients. It's has a whooping amount of umami taste, complete proteins and unique bouncy texture. I can survive solely on mushroom by itself! Some mushrooms can be crazy expensive, but not to worry because the cheap ones are as delicious as the expensive ones. For today's sandwich,
I present to you: 3 mushrooms between crispy soy milk skin
Shiitake; enoki; oyster mushroom; yellow rendang sauce; red rendang sauce.
In this dish I have incorporated some of my countries most eaten sauce and also this is vegetarian friendly once more!!
what's in it
fillings
The fillings includes chopped osyter mushroom, shiitake mushroom, enoki mushroom, green dragon vegetable, and yellow rendang.
Yellow rendang:
First make the paste by blending onion, garlic, Fresh ginger, fresh turmeric, Galangal, lemon grass. next fry it in oil until fragrant then add Cinnamon stick, Star anise,Cardamon, chili paste ,coconut cream ,tamarind juice, turmeric leaf, lime leaf , Salt, brown sugar. When almost ready add fresh grated coconut flesh and fried shallots.
soy milk skin
I cut it into a round shape to make it look presentable and neat. Soy milk skin is the layer of skin formed in the surface of the soy milk, the same way milk forms a skin when heated up and cooled.
red rendang sauce
Firstly make the paste by blending turmeric powder, salt, water, soaked dried chillis, shallots , onion , garlic, ginger , lemongrass stalks , galangal , fresh turmeric , cumin seeds, fennel seeds. Then fry the paste until aromatic. Add toasted coconut, coconut cream at the very last moment of the cooking process.
how's made
very straight forward sandwich the filling in between two soy milk skin.
then pan fry it until crispy and golden brown
lastly add the red rendang sauce and we are good to go!!
