Welsh rabbit or rarebit has a long history, it's origin can be traced back to the 18th century. It's basically toasted bread with a crispy cheesy topping, the ultimate comforting sandwich!
There's a lot of variations and this one is mine...
THE BREAD: home made buckwheat bread with crispy onions (buck wheat and white flour, yeast, salt, water, crispy onions, thyme)
THE FILLING: sauteed local porcini mushrooms, butter, salt, fresh chives and thyme, garlic, dried chilly
THE TOPPING: egg yolk, sour cream, mustard, salt, pepper, grated cheddar cheese
TOAST THE BREAD, LOAD IT WITH THE KING OF MUSHROOMS, ADD THE CHEESY TOPPING AND UNDER THE GRILL IT GOES! FINISH BY SCORING THE CRUSTY TOP AND SEASON THE SANDWICH WITH WORCESTER SAUCE!!HOW DELICIOUS IS THAT???? YUMMM!!!!
