Hi Steemians, writing this post has mixed emotions for me. On one hand, I'm happy because I love burgers and wanted to share this with you, on the other hand I intended to also enter it into the Steemit Sandwich Contest but I stupidly forgot one of the very important rules so my entry is actually invalid :(
Either way, I still love the Steemit Sandwich Contest and think it's a great initiative so will abide by all the other rules in the hope of getting the contest more recognition :)
Enough chit chat - let's get into it...! I've always wanted to try a "simple" peri-peri marinade as the one I usually make requires roasted capsicums (which I roast myself) and I usually cook the chicken over charcoal. I wanted something simple that could be a weeknight meal so I decided to give it a go with just raw capsicums and see if it still worked out, the answer is a resounding YES! Read on to find out more
- Ingredients required for marinade
- Add capsicums (chopped) and all the other marinade ingredients into a food processor or blender
- I used ziplock baggys to marinade the chicken thighs. Leave to marinade for 24 hours.
- Cook the thighs - I used my cast iron pan for this, great for high heat as non-stick is not built for this kind of heat
- Prepare a delicious side of hand-cut potato wedges sprinkled with onion powder, smoked paprika and salt
- Dinner is served!
Anyone familiar with the Steemit Sandwich Contest will know that you have to actually have one photo that validates your entry, sadly this was forgotten but luckily I was able to commiserate by eating this lovely burger. I made it for my family and they all loved it so I hope you guys did too!
