Earlier, I had the chance to try one of the Chinese style of food, specifically Teochew style. One of the dishes that I really like are the braised ones. For this meal, I had the braised/steamed fish together with a stir fried cabbage as a compliment to it.
About the restaurant, it’s a humble looking place that mainly serve teochew food. My first impression is that they a slightly lesser variety when it comes to the dishes that serve on the counter. One of the reasons is the fact that as soon as one of the dishes is out, they will have to cooked another batch or prepare another different dish to serve. That is actually good in terms of the quality. I personally think that if the food stays longer on the counter, the less appetizing it is for me.
Just a quick insight about me, I actually prefer seafood compared to a red meat. And so, I decided to go for the steamed fish. I’m convinced that the cook know what is he doing on the fish with the use of ginger which is a lot. That is the only way to get rid of the fishy flavour. I was right with my assumption, it taste really fresh.
It’s subtle fish flavour and a strong refreshing ginger taste to it. It’s exactly the kind of cooking that fits well with a fish meat.
The good thing about Teochew food is that I can simply mix and match everything and none will overpower each other. It compliments each dish. The sauteed cabbage is a good pair to the main dish.
