*1 kg semouline (very fine semolina)
*150 ml smen or oil
*1 tsp milk powder (optional)
*1 tsp instant dry yeast
*1 tsp sugar
*1 tsp salt
*3 tsp sesame or level or mix (optional)
*1 tsp orange blossom or rose water (optional)
*2 bowls of lukewarm water (or- depending on the quality of the semolina)

--Instructions:
*Place the sifted semolina in a gas3a or large dish
*Add all dry ingredients and mix
*Add oil or melted smen
*Work with the palms of the hands to make the semolina absorb fat
*Gradually wet with lukewarm water, working with your fingertips to make a firm paste
*Gather the dough without kneading too much
*Let it rest for a while covered so that the semolina absorbs water and becomes more manageable
*Take back the dough, work it so that it becomes smooth and homogeneous, but not too much for it to remain melting
*Shape 4 balls
*Place them on a tray, spacing them a little
*Cover with a clean cloth
*Light the fire and heat the tagine well
*Roll out the first ball to make a fine patty, hole it
*Place on a clean cloth.
*Do the same for the other patties.
*They rest until the tagine heats up.
*Cook them on a hot tagine on both sides
*Allow to cool a little and cut
