Home made rice dumpling 肉粽 by my wife
First we start with the material
the bamboo leaves 竹叶 - need to soak the dry leaves overnight ,boil it for 10 minutes, and then re-soak it overnight for it to be flexible.
mushroom 冬菇- soak overnight and cut off stem
shallot 葱头- fried and mix with glutionous rice to increase fragrance and taste
dried prawns 虾米 - fried together with black eye peas
dried oyster 蚝- soaked overnight
lap cheong (chinese sossage) 腊肠- sliced into pieces
salted egg 咸蛋- use only egg yoke
chestnut 栗子- soak until soft and boil for 10 minutes, clean the skin
meat 肉- marinated meat overnight
black eye peas 眉豆- soak overnight, rid it of skin and fried
glutinous rice 糯米- soak for around 3 hours and fried with soy sauce and spices
