The historic trading town of Hoi An in Central Vietnam is a popular stop for tourists. If you enjoy good food as I do, then make sure to give "Cao Lầu", "Kao Lao" or "Cao Lao" as it is always spelled different, a try.
Unlike pho, cao lau noodles are served with very little broth. The broth is seasoned with cilantro, basil, and mint and there is a special way to prepare it. The secret lies in the water: authentic cao lau is prepared only with water drawn from ancient Cham wells hidden around Hoi An.
