A good meaty and juicy burger was my husband’s choice of comfort food whenever he felt the need to celebrate or to cheer himself up when feeling low. He realky loved burgers like he loved me!
When he went plant-based, he knew he was really willing and ready to give up on his burger habit already and I witnessed how he gave it up cold-turkey! As a nuturing and devoted wife that I strive to be, I want to give him his burgers still. The only way I can do that is to create a vegan version. I tried several recipes and he would eat them, yeah, but I knew that he wasn’t impressed. After all, they all tasted like beans. Until I made this version recently... he said it was very, very close to ground beef!

I wanted to keep this recipe a secret, but I realized that it would be very ill of me to do so; hence, I’m sharing it now with all of you. I might encourage carnivores to ditch meat! That would be awesome!
JAN’S CHICKPEA AND QUINOA BURGER
Ingredients:
4 cups cooked chickpeas (i used the dry ones for fuller flavor and better texture), mashed
1.5 cups cooked quinoa
1 cup oat flour
1 red onion, chopped
1 cup shiitake mushrooms, chopped
1 tbsp. Garlic powder
Salt and pepper
Chili powder (optional)
Just combine everything using your hands then form into patties. Pan-fry using coconut oil. Enjoy!
