Today I wanted to do food. So I will give you a lemon vegan cupcake recipe i make all the time.
Makes about 12
INGREDIENTS
For the Cupcakes:
1 and 3/4 cups All Purpose Flour
1 cup Sugar
1 tsp Baking Soda
1/2 tsp Salt
1 cup Soy Milk (gotta be non-dairy milk)
1/3 cup Vegetable Oil
1 Tbsp Apple Cider Vinegar
1 tsp Vanilla Extract
2 tsp Lemon Essence
1 Tbsp Lemon Zest
For the Lemon Buttercream Frosting:
3 cups Powdered Confectioners Sugar
1/3 cup Vegan Butter or Margarine
2 Tbsp Fresh Lemon Juice
Now the method of cooking
Preheat the oven to 350f or 180c
Sift the flour into a mixing bowl and add the sugar, baking soda and salt. Then add the soy milk, vegetable oil, acv vinegar, vanilla and lemon zest. Whisk this by hand and iy will combine properly and remove any lumps.
Line a cupcake tray with the liners and split the batter between them.
Bake for about 25 minutes or until a toothpick comes out clean when you place in thw middle.
When baked transfer to a wire cooling rack and allow to cool completely before frosting.
To do the frosting start by adding the powdered sugar, vegan butter, lemon juice to a electric mixing bowl.
Start kinda slow then slowly crank up the speed. Again If it’s too thick, add a little more lemon juice to fix the thickness.
Now you wanna pipe the frosting on top of the cupcakes and you can decorate with some lemon zest or just forsting.
