Vegan Nachos "cheat meal"
Preheat oven to 180 °c
You need:
For "cheese" sauce:
1 cup cashews ( soak in water for 2 hours )
1 teaspoon onion powder
1/2 cup nutritional yeast ( cheesy taste )
1 teaspoon paprika powder
1 teaspoon garlic powder
1/4 cup oat milk ( or other vegan milk )
1/8 teaspoon turmeric powder ( for yellow cheesy color)
a dash of chili
1.5 squeezed lime
add salt or more spice if you want.
Soak 1 cup cashews for 2 hours, then blend everything into a smooth paste in a smoothie machine etc
Pour into a saucepan and heat up. ( do not let it burn, stir constantly )
Continue until it has a smooth heavy consistency.
For filling you need:
1 glass of salsa
1 bag of tortilla chips
1 Onion
1 Paprika
1 teaspoon honey
1 tablespoon water
1 box black beans
1 box red lentils
1 box corn
Add Mexican spice and salt to taste.
Start with chopping onion, paprika. add 1 teaspoon honey and 1 tablespoon water together in a pan, Sautee this until soft.
When sautéed, add 1 box of black beans and 1 box of red lentils. Continue to sautee for about 5 min ( depending on how you like your beans to be) add corn and cook for about 2 min.
Add Mexican spice and salt to taste.
Lay tortilla chips down on a baking plate, add salsa (as much as you want) and top with your filling, then pour the cashew cheese on top, cheese is easier to spread when it's warm.
Bake in an oven for 15 min. Serve hot, garnish with optional lime, vegan sour cream, and cilantro.
