Hello my Dearest Foodies,
These pancakes may not be anything special and you may use your own recipe instead, however, I really want you to try this raspberry ganache.
After you apply the ganche on your pancakes, they will be soaked up with it and that is super delicious. Especially now at summertime, they cool down much faster that way and they become very refreshing, yet satisfying.
SUMMER PANCAKES
Oats Pancakes with Raspberry Ganache
Vegan – Gluten Free – Refined Sugar Free

INGREDIENTS for 6 pancakes
• Organic rolled Oats 1cup
• Banana 1 large
• Chia egg 1 (1 tbs chia + 3tbs water, let it sit for 5min)
• Plant based milk 1 cup
• Coconut oil (or oil of your choice)
• Vanilla extract ¼ tsp
• Baking powder 1tsp
• Salt a pinch
PROCESS
• Blend all ingredients in a blender except chia egg.
• Transfer into a bowl, add chia egg and mix thoroughly.
• If the dough becomes too thick, you may add 1 or 2 tbs of filtered water.
• Heat up your oil on a frying pan and by using a ladle; pour ¼ cup of the mixture on the hot oil.
• Lower the heat to medium and after 2 minutes flip on the other side for another 2 – 3 minutes.
• Serve with raspberry ganache and fresh raspberries.
GANACHE
• Frozen raspberries 1 ½ cup
• Coconut milk ½ cup
• Maple syrup ¼ cup (you may add more if you like)
Blend all in a food processor and place it into a refrigerator for an hour for it to slightly thaw.
