I'm not exactly a choc-o-holic, but if I'm having a dessert I will probably opt for something chocolatey.
I am a bit of a sucker for a chocolate brownie, and I have tried baking them in the past with reasonably good results.
However, I have never been able to achieve that quintessential brownie- crisp on the outside and gooey in the middle.. until now!
This recipe is so so simple but will guarantee you delicious brownies in less than 45 minutes.
And best of all, cruelty free!
Here's what you'll need:
- 2 cups flour
- 1 cup water
- 1 cup brown sugar
- 1 cup caster sugar
- 1 tsp salt
- 1 tsp vanilla extract
- 3/4 cup cocoa powder
- 1/2 cup melted coconut oil
- 1/2 baking powder
- 1/2 cup nuts (I used walnuts)
Method:
Preheat the oven to 180c/ 350ºF.
Chop the nuts using a sharp knife.
- Add the water to a pan on a low heat, sieve in half of the flour and stir well until the mixture has a gloopy, porridge- like consistency.
- Remove the pan from heat and set to one side.
- In a large bowl, mix the sugar, salt, vanilla, cocoa powder and vegetable oil, and then add the flour and water mixture.
- Mix well.
- Sieve in the remaining 1 cup of flour, plus the baking powder and nuts. Add a little more water if necessary.
- Spread the mixture into a greased pan.
- Bake for 25 minutes, or until a knife inserted into the cake comes out clean.
- Leave to cool, then cut into rectangles and sprinkle some chopped nuts on top.

You don't lose anything in terms of flavour or texture by omitting the dairy ingredients and it's so rewarding to see others realising that!
