Hey guys, today I'm going to share a really simple and delicious lunch that I threw together today.
I am very much a hummus lover and am always surprised at how versatile an ingredient it can be!
I love making wraps with hummus as a base- it's the perfect snack and goes with pretty much any salad accompaniment.
Here's what you'll need to make a yummy lunch for 1:
- 3 tbsp hummus
- 1 spring onion
- 1 inch of cucumber
- 2 leaves of romaine lettuce
- 1 carrot
- 2 mini tortilla wraps
- 2 tbsp caramelised onion chutney (mango would work well too)
- 1 tsp olive oil
- Ground black pepper
Method:
Grate the carrot, wash the lettuce and finely slice the spring onion and cucumber.
Spread the hummus evenly onto the tortilla.
Grind some black pepper on top and add a drizzle of olive oil.
Place some lettuce down the middle of the tortilla.
Top with the spring onion, cucumber and carrot.
Finally, top with some caramelised onion chutney.
Add a bit of black pepper to finish.
Roll into a wrap and enjoy!
It's such a simple meal and takes mere minutes to prepare.
I just love the combination of the sweet onion chutney, carrots and onions, it's really flavourful and has a great crunch!
It's really delicious and a nice light option if you're bored of eating sandwiches for lunch.
