My daughter loooves these.
Their sweet taste and moist texture make them my all time favorite.
I focus on keeping my recipes quick, simple but most importantly tasty.
That makes it so much easier with a toddler at home ♡
1 cup oats
1 cup light coconut milk
1/3 cup wholemeal flour
2 tsp baking powder
1 large spotty banana
pinch salt, cinnamon & vanilla powder
Start with mixing the dry ingredients together in a big bowl, then add banana and coconut milk
I use a hand blender to blend everything together.
Heat the pan on medium and spread little bit of coconut oil.
Pour a desired amount of the dough and use a spoon to spread and shape your pancake
Cook each side for 2 minutes or until you see bubbles and the sides turn darker brown.
Spread with whatever you like and enjoy ♡
I used maple syrup, bananas, strawberries & finely chopped vegan chocolate.
