Who can resist these delicious vegan doughnuts? 😍 So much healthier and just as delicious as those deep fried ones!
Ingredients:
For the doughnuts:
- 1/4 cup of coffee
- 2 tbsp of peanut butter
- 1 sliced banana
- 2 tbsp of brown sugar
- 3 cups of flour
- 1/4 cup of cornstarch
- 1 tbsp of baking powder
For the glaze:
- 3 cups of icing sugar
- 1 tbsp of cacao powder
- 1 tbsp of dairy free milk
Blend the coffee, peanut butter, brown sugar and the sliced banana until you obtain a creamy mixture.
Then gradually add the flour, baking powder and cornstarch into the mixture.
Fill the Doughnut Baking Tray 3/4 full and bake them for about 10 minutes or until they pass the toothpick test!
Let them cool down before dipping them into the glaze.
For the garnish i used chopped peanuts, grated dark chocolate and raw cacao nibs.
