Thanksgiving is almost here and I’m ready to show you some of my favorite recipes to Celebrate a Vegan Thanksgiving. Today’s is for a delicious Vegan Roasted Cinnamon Sweet Potatoes. Ingredients:
4-5 Medium Sized Sweet Potatoes
1 tbsp Organic Maple Syrup
1 tbsp Coconut Oil melted
2-3 tsp Cinnamon
1 tsp Sea Salt
Instructions:
- Preheat oven to 400*F
2 .Evenly chop sweet potatoes. This will ensure that all your dish bakes at the same time. Place into a large bowl. - Add maple syrup and coconut oil. Mix until everything is coated.
- Place sweet potatoes onto a parchment lined sheet tray. Sprinkle on cinnamon and sea salt. Mix to make sure the cinnamon and salt coat all of your potatoes. Using a spatula or your hands, spread potatoes into an even, single layer.
- Place into preheated oven for 40-50 minutes. The sweet potatoes should be fork tender and a golden brown color.
- Once fork tender, remove from oven and allow to cool a bit. Serve immediately.
- Enjoy.
