I'm so glad to see that the contest is back :) It really heps to inspire and encourage people to take care about the animals and eat healthier, as well.
Let me share one of my favourite thai food recipe with you, which is very quick and simple to make. It is 100% plant-based, oil-free, gluten-free and refined sugar-free.
Recipe:
2 carrots
1/2 head of broccoli
1 red pepper
1 small white onion
2 cloves of garlic
2 cups coconut milk
1 tsp curry podwer
2 tsp agave
1 inch ginger
pinch of salt
1/4 tsp cayenne pepper
ittle red cabbage for garnish
Cut all the veggies into slices except the ginger. Sautee them for a few minutes (add 1/4 little water into the pot und put a lid on the top to cover it). Add curry the powder, cayenne pepper, ground ginger, salt, agave and coconut milk, then cook it for a few minutes and when the veggies are a bit softer already but not overcooked, turn off the heat and it's ready :) Serve it with brown rice.
