Instructions
1- Prepare the Cassava:
- Peel the cassava using a knife. For ease, make a shallow cut around its circumference and peel off the skin in strips.
2- Grate the Cassava:
- Using a metal grater, grate all the peeled cassava into a bowl.
3- Remove Excess Liquid:
- Place portions of the grated cassava inside a clean kitchen towel. Squeeze the towel firmly to extract all the liquid. This step is crucial to prevent the beiju from sticking during cooking.
4- Mix Ingredients:
- Break apart the squeezed cassava until it is loose and uniform. Add the grated coconut and salt to the mixture.
- Use your hands to mix all ingredients thoroughly until well combined.
5- Cook the Beijus:
- Heat a non-stick frying pan over medium heat.
- Place a portion of the cassava mixture into the hot pan.
- Using your hands or a spoon, gently spread and flatten the mixture to form a thin, round shape.
- Cook for a few minutes until the edges start to firm up and the bottom is lightly golden.
- Carefully flip and cook the other side until also lightly golden and fully cooked.
- Remove the cooked beiju from the pan and serve warm. Repeat the process for the remaining mixture.
